Sweet Corn Soup


Ingredients:

Sweet corn: 1
Milk:1/2 cup
Coriander leaves, chopped:1 tblsp
Green chilli (optional):1
Corn flour(starch):1 tsp
Sugar:1/2 tsp
Salt and pepper:As needed
Chopped spring onion greens:1 tblsp

Directions:

1. Clean the leaves and silk strands from the corn. Using a sharp knife, separate the corn kernels. Pressure cook with a cup of water and sugar. Reserve 2 –3 tblsp of corn for garnish.
2. Blend the rest well. I used my hand blender, if you are using a mixie, drain, reserve the water, and cool down and grind to a smooth paste. Strain it to remove the skin. This step is optional, but I do this always.
3. Add milk,the reserved corn kernels and bring to boil. Add the coriander leaves and if using green chillies, add it. Boil for 4 minutes and lastly add the corn flour dissolved in 2 tblsp of water. Boil until thick. Add salt and pepper generously and mix well. Garnish with the chopped spring onion if desired.

Sweet Corn Vegetable Soup

Ingredients:

Corn flour: 2 tbsp.
Carrot: 1 finely chopped
Beans-:3 chopped finely
Onion: 1 tbsp. finely chopped (optional)
Water: 2 cups
Milk: 1 cup
 Corn kenals:1 cup
Sugar: 2 tsp.
Pepper powder - 1/2 tsp.
Salt to taste
















Direction:

1. 1.First saute carrot,beans and onion in 1 tsp of oil till raw smell leaves.
2. Take a pressure cooker and add sauted vegetables and sweet corn kenals add 2 cups of water to this add salt and bring it to boil for 1 whistle in the pressure cooker
3. After the mixture is cooked add 2 tbsp of corn flour in a separate pan and add sugar and add milk and stir the mixture and add the cooked mixture to this pan and boil it for 7 to 8 min
4. Add chopped spring onions to the soup bowl and add the soup
5. Add pepper according to your taste
